Uzundere Restaurant, which brings Cappadocia’s 4,000-year-old culinary heritage to life through authentic recipes, has achieved a significant milestone by being awarded the title of “Michelin Guide Selected / Recommended Restaurant” by the Michelin Guide, one of the most prestigious authorities in the world of gastronomy.
Located in Göreme within Şah Saray Cave Suites, our restaurant is among the select few from Cappadocia included in the Michelin Guide Türkiye 2026 Selection. Being featured in this guide, marking the first time the Michelin Guide has evaluated Cappadocia, is a tremendous source of pride for us.
What Is the Michelin Guide?
The Michelin Guide was first published in France in 1900 by André and Édouard Michelin as a small guide to assist travelers. Over the years, it has evolved into one of the world’s most respected restaurant evaluation authorities, with a strong focus on gastronomy.
Today, the guide assesses restaurants based on criteria such as originality, technical skill, balance of flavors, quality of ingredients, and consistency over time, thereby setting an international standard for culinary excellence.
Being listed as “Michelin Guide Selected / Recommended Restaurant” signifies that a restaurant’s overall experience, presentation, and quality are recognized and validated on a global scale. This distinction is widely regarded as a symbol of reliability and high standards worldwide.

“Diners are welcomed with a complimentary spread of various little appetisers and sweet beverages, a gesture that immediately reflects the importance placed on hospitality here. This is the cosy halal restaurant on the first floor of Şah Saray Cave Suites, which affords wonderful views over the valley. The menu is a celebration of the culinary traditions of Turkey and the Islamic world. Imagine an earthenware bowl filled with finely sliced beef elevated by dried plums, onion and herbs, served with a side dish of rice with almonds and raisins. A delicate sweetness runs subtly throughout, always beautifully balanced. Please note the dress code; for example, legs must be covered.”
This commentary brings international visibility to our 53-item historical menu, prepared by Chef Ulaş Tekerkaya, which is crafted using dried fruits, grains, and local ingredients inspired by centuries-old traditions.
